Ao longo do envelhecimento os vinhos ficam mais aloirados, pois libertam os seus depósitos no casco em vez de o fazerem na garrafa. As trasfegas originam oxidações e consequentemente a perdas dos aromas a fruta fresca, passando o vinho a adquirir aromas a frutos secos.
