The Pinot Noir grapes come from Quinta de Nápoles, from a plot planted at the beginning of the millennium, which has been in certified organic production mode since 2018. The selection of the grapes is done in the vineyard in order to harvest the bunches that are in a perfect state of ripeness and health, done in 20kg boxes, being directly placed in stainless steel tanks, whole bunch, where they are foot-trodden and ferment spontaneously at controlled temperature. After alcoholic fermentation in stainless steel, malolactic fermentation is done in barrels, where it aged for about 16 months.
