No Mouchão vinificamos TODOS os tintos em lagares de pedra abertos. Cachos completos, com engaço, são incluídos no processo de maceração pelo que a altura da colheita é especialmente crítica, visto que é necessário encontrar um equilíbrio delicado entre açúcares, ácidos, maturação fenólica global ( cor, taninos, etc) bem como a lignificação do engaço. Os cachos completos, colhidos à mão, são transportados em caixas de 20 kg para a adega, onde são pisados a pé em lagares e deixados a fermentar por aproximadamente 4 a 6 dias. Em 2016 os taninos, a cor e a maturação do engaço estiveram muito perto da perfeição. Este vinho jovem terá a sua fermentação malo láctica no outono, em largos tonéis de madeira (5 000 L). Em meados do Inverno é filtrado após o que permanece em estágio sem qualquer intervenção por cerca de 4 anos nos fomosos toneis de Mogno e macacaúba. Depois de engarrafado fica a estagiar nas nossas caves por mais 3 anos antes do seu lançamento.Decantar ou abrir entre as 12 e as 24 horas antes de servir. No seu melhor potencial até 2036.
