Vinification of Caves São João Sparkling Wine 100 Years of History Gross: After a very delicate pressing of the grapes, harvested at the end of August, the must fermented for 15 days in stainless steel vats at a controlled temperature. The elaboration, following the classic method, began in March 2016 with the extraction with free yeasts, with the refermentation taking place in the cellar for 25 days at 14 ºC, followed by a period of aging in the bottle, on lees, of 48 months, for the first batch discarded, in May 2020.
Yellow with plumbeous nuances
It has a dry attack and excellent texture and creaminess, also showing great gustatory persistence.
Roasted almonds, toast, dried flowers, butter biscuits, brioche, dried figs, honey, citrus peel, candied fruits, chalk and traces of red fruits dominate the aroma of this very rich and complex sparkling wine.
