Vinification du Porto Kopke Colheita 2014 : Vendangées à la main au moment idéal, les raisins sont égrappés, foulés et transformés en vin grâce à un processus de macération soigneux pour extraire leur couleur, tanins et arômes, rehaussés par une agitation constante pendant la fermentation. Celle-ci se déroule dans des cuves (lagares) à température contrôlée (entre 28-30°C) jusqu'à atteindre le degré de douceur approprié (Baume). À ce stade, l'eau-de-vie de raisin est ajoutée pour créer le vin fortifié final. Un vin de grande qualité, issu d'une seule récolte. Un vin Colheita vieillit en fûts de chêne pendant des périodes qui peuvent varier, mais jamais inférieures à 7 ans. Il est ensuite mis en bouteille et vendu selon les exigences du marché.
