Vinification du Porto KOPKE 30 Ans : Récoltées à la main à leur point optimal, les raisins sont éraflés, écrasés et vinifiés selon un processus reposant sur une macération soigneuse avec extraction de couleur, de tanins et d'arômes des peaux, complété par des remontages permanents pendant la fermentation. Celle-ci se déroule dans des lagares, à une température contrôlée entre 28 et 30ºC, jusqu'à atteindre le degré Baumé souhaité. À ce stade, on procède à l'ajout d'eau-de-vie (bénéfice), donnant naissance à un vin fortifié. Vin de haute qualité, obtenu par assemblage de vins de récoltes de différentes années, afin d'acquérir une complémentarité de caractéristiques organoleptiques typiques de ce style de tawny âgé. Il vieillit en bois pendant des périodes de temps variables, au cours desquelles l'âge mentionné sur l'étiquette correspond à l'âge moyen approximatif des différents vins participant à l'assemblage, exprimant le caractère du vin en ce qui concerne les caractéristiques conférées par le vieillissement en fût.
