Le uve sono state selezionate attraverso il tappeto di scelta, prima di entrare nella pressa e sono state leggermente pressate. La prima fermentazione alcolica è avvenuta a una temperatura di 13/14ºC in piccole vasche da 500 litri. L'imbottigliamento per la seconda fermentazione è stato effettuato secondo il metodo tradizionale, con lieviti liberi e manualmente, svolgendosi in cantina a temperatura costante di 17ºC. È stata effettuata la batonnage su ogni bottiglia una volta ogni 2 mesi fino al dégorgement. Tutto fatto manualmente dalla vendemmia fino alla cassa.
