Vinificazione del Vino Tinto Covela Fantastico 2014: Vendemmia manuale. Vendemmia organizzata per appezzamenti di vigneto per garantire la vendemmia al momento giusto. Trasportare in piccole scatole per evitare schiacciamenti. Selezione manuale dei grappoli. Diraspatura seguita da una pigiatura soffice. Fermentazione con delicati rimontaggi manuali giornalieri. Macerazione post fermentativa. Pressatura delicata. Affinamento in botti di rovere francese da 300 litri per 21 mesi. Nessuna stabilizzazione o filtrazione (si possono formare depositi nella bottiglia). Prodotto solo in annate eccezionali.
