In cantina José de Sousa vengono ancora utilizzate alcune tecniche ancestrali di vinificazione, la più emblematica delle quali è l'uso della talha nella fermentazione delle uve. L'essenziale della vinificazione in talha è cambiato poco in più di duemila anni. In questo processo, le uve bianche vengono leggermente schiacciate a piedi e diraspate a mano su un tavolo di ripanço. La fermentazione avviene, senza raspi, in talhas con una capacità media di 1.600 litri a una temperatura intorno ai 28ºC, controllata tramite irrigazioni delle talhas 4 volte al giorno. La fermentazione dura circa 8 giorni, con il vino a contatto con le masse fino a novembre. Matura in anfore per un periodo da 4 a 10 mesi, a seconda della vendemmia. Durante questo periodo si applica un film di olio d'oliva per prevenire ossidazioni.
