Le uve vengono raccolte manualmente di prima mattina, in piccole cassette, per preservarne la freschezza, e poi raffreddate in una cella frigorifera prima di essere vinificate. All'arrivo in cantina, le uve vengono accuratamente selezionate sul tavolo di scelta, successivamente diraspate, delicatamente schiacciate e trasferite in vasche di cemento ovali da 3000 litri, dove avviene la fermentazione alcolica con temperatura controllata. Segue la macerazione post-fermentativa per sette mesi.
