Quinta dos Carvalhais Colheita è un vino rosso del Dão di qualità eccezionale, massimo esempio di eleganza e ricchezza. Erede delle antiche conoscenze, Quinta dos Carvalhais unisce l'esperienza all'innovazione per creare vini molto eleganti, con sapori di intensa delicatezza e la personalità unica della regione. Le uve sono state raccolte per varietà e per lotto, eseguendo all'epoca una rigorosa selezione qualitativa delle stesse. Dopo una diraspatura e pressatura delicate, le uve vengono, per gravità, trasferite in vasche di acciaio inox di piccole dimensioni con controllo della temperatura, dove vengono vinificate, varietà per varietà. La fermentazione alcolica è durata circa 8 giorni, a una temperatura media di circa 27ºC, con la Touriga Nacional che è rimasta in macerazione post-fermentativa per altri 10 giorni. Questo vino ha subito un affinamento in barrique di rovere francese usate per un periodo di 12 mesi. Il lotto finale è stato elaborato sulla base della selezione qualitativa di numerose prove e analisi effettuate durante questo periodo, che hanno permesso di scegliere i migliori vini, varietà per varietà. Il vino è stato sottoposto a una leggera chiarifica e filtrazione, prima dell'imbottigliamento, ed è stato imbottigliato senza trattamento di stabilizzazione a freddo, il che può provocare la formazione di deposito durante il suo invecchiamento in bottiglia.
