Vinificación del Blog Tiago Cabaço Varietal tinto: En 2019, las viñas más antiguas y mejores parcelas experimentaron una maduración larga y gradual, resultando en uvas con un equilibrio excepcional entre acidez y taninos. Las variedades Syrah y Alicante Bouschet fueron las que más se beneficiaron de las condiciones favorables de la naturaleza, entregando uvas en un punto de maduración perfecto. Con una materia prima de tan alta calidad, decidieron intervenir lo menos posible, permitiendo que las uvas hablasen por sí mismas. Se limitaron a una leve pisa a pie en los lagares, siguiendo los métodos tradicionales de la región, seguida de un envejecimiento en barricas nuevas y de segundo uso de roble francés, para que el vino pudiera expresarse de manera más pura.

Sedoso y aterciopelado en textura, es un tinto intenso y estructurado, vigoroso pero no agresivo, complejo y elegante, con un final fresco y gran potencial de guarda.
Tenso y cerrado, concentrado y poderoso, floral y afrutado, termina con algunas notas terrosas que le añaden complejidad.
