Las uvas provenientes de Vinhas Velhas fueron transportadas en cajas de 22 kg de capacidad y sometidas a un riguroso selección en mesa de elección a la entrada de la bodega. Tras un despalillado total y un ligero aplastamiento, el mosto fue transferido a cubas de fermentación de acero inoxidable con temperatura controlada. Al final de la fermentación alcohólica, se procedió a un prensado suave. Quinta do Crasto Reserva Vinhas Velhas envejeció en barricas de roble francés (85%) y roble americano (15%), donde permaneció alrededor de 18 meses.
