En Alto dos Amores conseguimos tener la que es, probablemente, el paisaje más extraordinario de la región del Dão. Quizás por eso, Alto dos Amores ha sido, desde tiempos remotos, el punto de encuentro de las parejas enamoradas del pueblo de Santar. Si en otros tiempos la magia de esos paisajes servía para conquistar corazones, hoy las uvas que allí nacen sirven para conquistar a los más exigentes amantes del vino. Es fruto del romanticismo de esta historia, que nace este espumante de la Casa de Santar. Vinificación: Estrujado con despalillado total, prensado neumático suave, donde solo se aprovechó el mosto flor. La clarificación fue estática natural y la fermentación alcohólica ocurrió a 18ºC. Espumantización por el método clásico. Estagio: Mínimo 24 meses en bodega y 3 meses en botella.
