El Moscatel Favaios 10 Años es un vino de lote en el que se utilizan para su constitución solo las mejores cosechas de Moscatel. En los años en que la naturaleza permite condiciones para que la variedad Moscatel se exprese en todo su esplendor, se realizan algunas fermentaciones con una cuidadosa selección de las uvas. La fermentación dura alrededor de tres días con intensa maceración pelicular y con temperatura controlada de 15-16°C. Luego se añade el aguardiente vínico a las uvas y mosto, interrumpiendo la fermentación para obtener un vino con alto contenido alcohólico y azúcar residual. La maceración ya en presencia de aguardiente se mantiene por 5-6 días más siempre a baja temperatura. Tras el prensado, el vino inicia un proceso de envejecimiento en toneles de madera durante varios años, mejorando la integración del aguardiente con el vino y perfeccionando su bouquet. Durante el envejecimiento en madera se eligen los vinos que constituirán el lote del Favaios 10 Años, mezclando cosechas más antiguas con otras más jóvenes, haciendo el vino más rico, intenso y complejo.
