Produzido em homenagem a Dona Antónia Adelaide Ferreira. Um vinho único, pois é feito a partir de uma vinha no Rio Torto plantada maioritariamente na década de 1940, com um field blend de mais de 30 castas. Um vinho muito raro, só produzido em anos excepcionais, e em quantidades muito reduzidas (aproximadamente 4000 garrafas).O ADELAIDE provém de uma parcela de vinhas muito velhas (algumas com mais de cem anos), com uma mistura de mais de 30 castas diferentes, com predominância das seguintes: Touriga Franca, Rufete, Tinta Roriz, Tinta Amarela, Tinta Barrroca, Tinta Nascida, Malvasia Preta, Mourisco, Bastardo, Touriga Nacional, Tinta Bairrada, Tinta da Barca, Tinta Francisca, Tinta Carvalha, Moscatel de Hamburgo, Tinta Pomar, Piriquita, Moreto, Sultanina, S. Saúl, Casculho e Preto Martinho. O solo é predominantemente xistoso. A produção destas vinhas, que têm uma densidade de plantação de 7.000 plantas por hectare, é em média de 400 gramas por planta, o que equivale a 2.800 Kgs por hectare. Estas vinhas estão entre as vinhas com menor produção por hectare, a nível mundial.Vinificação: As uvas, após criteriosa selecção manual no tapete de escolha, foram desengaçadas e fermentaram em cubas de aço Inox com temperatura controlada a 24º e com remontagem mecânica por robot durante 9 dias.O estágio e a fermentação malolática decorreram em barricas novas de Carvalho Francês de 225 litros durante 19 meses.
