Pinot Noir is harvested from the Vinha do Bárrio in Mogofores, which gives robustness to this sparkling wine, and the Chardonnay harvested from Vinha das Andorinhas in Pedreira de Vilarinho shows its main attributes, the perfume and creaminess. The glacé dégorgement of the Espumante São Domingos Elpidio Velha Reserva Bruto releases the yeasts and then 4.60 g/L of expedition liqueur is added to finish the wine. After a period of two months following this entire process, the bottle of sparkling wine is ready to enter the market.
