Champagne Jacquesson Cuvee 747 BrutO conceito Cuvée 700 é único na região de Champagne e representa o oposto de um vinho non Vintage! Procura-se a excelência em vez da homogeneidade, o respeito pelo caráter da colheita em vez de negá-lo, e a preferência por produzir um grande vinho em vez de manter um “estilo da casa”. A adição de vinhos de reserva tem como objetivo aumentar a complexidade do vinho sem esconder o caráter do ano-base. Ao seguir esse caminho, rapidamente ficou claro que não poderíamos produzir um vinho vintage, pois isso apenas diminuiria a qualidade e a pureza da Cuvée 700.75% da colheita veio de Aÿ, Dizy, Hautvillers e Champillon, e 25% de Avize e Oiry. O inverno foi ameno e seco. A geada de primavera ocorreu três vezes e causou principalmente danos às nossas vinhas de Chardonnay, justificando a predominância de Pinots nesta cuvée. O verão foi seco, com ondas de calor que provocaram queimaduras solares nas uvas. A colheita, de qualidade muito elevada e rendimentos moderados, ocorreu entre 12 e 22 de setembro. Os vinhos são estruturados, equilibrados, longos e complexos.Gestão cuidadosa do solo e das vinhas com o objetivo de expressar a diversidade das parcelas. Vinificação e envelhecimento em grandes tonéis de madeira, sobre as borras, sem filtração nem colagem.Castas: 41% Chardonnay, 39% Pinot Noir, 20% Pinot Meunier.
