Vinification of the Castello D Alba Reserva Red 2021 in 3 Liters: Manual harvest, reception with total destemming and immediate crushing, the grapes are fermented by varieties and by batches, in order to achieve a rigorous selection early on that will later give rise to the very traditional "blend" of the old world, revealing the art of selecting grapes by parcels and the art of selecting wines for later blending. Fermentation takes place in small capacity stainless steel tanks, with temperatures around 28 ºC. Gentle and controlled macerations to obtain elegant and aromatic wines. Aging: Part of the batch ages for a period of 12 months predominantly in French oak, with a small percentage of American wood.
