O Inniskillin Espumante Vidal Icewine da Península de Niagara (Ontário, Canadá), é elaborado com uvas Vidal Blanc naturalmente congeladas a cerca de −10 °C, fermentadas sob pressão em tanques Charmat até atingir 9,5% de álcool. Destaca-se por aromas exóticos de pêssego, laranja, manga e mel, seguidos de sabores vibrantes de lichia, abacaxi e frutas cítricas, tudo equilibrado por uma acidez nítida e efervescência fina e persistente. Com aproximadamente 214 a 275 g/L de açúcar residual e acidez total entre 8 g/L e 10,5 g/L, apresenta corpo viscoso, textura cremosa e frescura revitalizante no final.
