The grapes from the vineyards, most of which are very old, over 50 years old, are subjected to sorting upon arrival at the winery, and are subsequently destemmed. This is followed by low-temperature pre-fermentation maceration with robotic foot treading in stainless steel lagares. They are then transferred to stainless steel tanks with a controlled temperature between 25 and 28º where alcoholic fermentation is completed. During this process, the usual tasks of pumping over and "delestage" are carried out, aiming for a rigorously selective extraction restricted to the desired constituents. Vinification ends with post-fermentation maceration. The masses remain in contact with the must for a maximum of 18 days. Aging in French oak barrels for a period of about 18 months. Use of 70% new barrels and 30% second-year barrels.
