Quinta de Pancas Grande Reserva TintoAs uvas que deram origem a este vinho têm origem nos talhões 6 e 17 de CabernetSauvignon, vinhas velhas cerca de 30 anos, e as restantes da casta Touriga Nacional da parcela 1 com 18 anos de idade. As vinhas encontram-se numa sequência de colinas e vales, protegidas pela Serra de Montejunto. O clima é mediterrânico com influência atlântica. O solo calcário e as inclinações elevadas destes talhões permitem um stress ideal originando uma forte concentração de sabores, cor e acidez de uvas de bagos muito pequenos.Vinificação: As uvas foram vinificadas separadamente com uma curta maceração a frio. Fermentaram a uma temperatura controlada de 28ºC durante 8 dias, com um regime diário de “deléstage” e remontagens manuais. A fermentação malolática ocorreu em cubas de inox, excepto na Touriga Nacional onde ocorreu em barricas de Carvalho Francês. Os lotes destes vinhos estagiaram em barricas carvalho francês durante 22 meses. O lote final foi elaborado após uma selecção qualitativa, confirmada por inúmeras provas. Foram produzidas 2861 garrafas.

Aroma complexo e elegante onde as notas terrosas, minerais e algumas sugestões de especiarias lhe conferem grande personalidade. Há notas de fruta preta, terra molhada, violeta, café, tabaco e ligeiro vegetal típico da casta Cabernet Sauvignon a dar um “fresheur”.
