Vinification of Quinta dos Bons Ares White Wine 2022: For this wine, a first quality selection of grapes was made, which were harvested and placed in small boxes, and then cooled over 12 hours of skin maceration at the Quinta dos Bons winemaking center Ares. Upon reception, they underwent a second selection, before falling by gravity into the presses in which they were subjected to gentle pressing cycles. The clean must fermented slowly and at low temperatures, to preserve the aromatic potential, of which 10% fermented and aged for 7 months in French oak barrels.
