Vinification : La vinification des trois cépages se fait séparément, le lot étant réalisé par la suite. Les raisins sont récoltés à la main et le pressage des grappes entières se fait dans un pressoir pneumatique. Après 48 heures de décantation, le moût fermente à 18ºC dans des fûts de 500L en chêne français. Une fois la fermentation terminée, le vin vieillit 10 mois dans les fûts avec un bâtonnage hebdomadaire pendant 2 mois.
