Après une sélection minutieuse de leur meilleur état, les raisins ont été récoltés dans des caisses de 25 kg et envoyés au centre de production de vins, où ils ont été entièrement désacorrés. La fermentation a eu lieu pendant 9 jours dans les traditionnels cuves en pierre granitique de 7 tonnes avec un sol en pieds et un remontage doux pour la lixiviation des couvertures et l'extraction des composés phénoliques et aromatiques. À la fin de la fermentation alcoolique, le vin a été transféré dans des fûts de chêne français de 2ème année, où la fermentation malolactique a eu lieu et a été élevée pendant environ 18 mois.
