Winemaking of Wine Quinta da Pedra Escrita Organic White Magnum: Manual harvest into small perforated boxes of 15 Kg, fermentation with cold technology, in a reductive environment, with temperature controlled around 16ºC. The grapes are pressed without crushing and without destemming under inert atmosphere in order to preserve the full aromatic potential of the grapes. A great effort is made to ensure that all pre-fermentation operations are carried out with the utmost rigor, being responsible for the intrinsic quality of the future wine. The entire wine ferments in used French oak wood and remains there after a small racking over fine lees with periodic stirring "battonage" until the final blend is made at the end of Spring. Fermentation and aging of 6 months in French oak wood with stirring of the lees until bottling, after which it aged in bottle for 4 months.

Very citrusy and mineral aroma, notes of grapefruit, discreet exotic fruits, and wildflowers complexed by a strong mineral quality from exclusively granitic soil, with a very subtle smokiness.
