À Quinta da Boavista, pour garantir la préservation des caractéristiques du cépage et le contrôle total du processus de production, nous recourons à la vendange manuelle et à la sélection manuelle des grappes, suivies d'un éraflage et d'un doux écrasement des baies. Comme réservoirs de fermentation, nous avons les traditionnels lagares en granit avec foulage à pied, des cuves de fermentation en inox et, pour les petits lots, des conteneurs en PVC alimentaire ou fermentation en fûts neufs en bois français de 500 litres. Chacun de ces types de fermentation confère au vin un style particulier. Comme philosophie de vinification, nous n'en avons qu'une : extraire délicatement les meilleures caractéristiques de nos raisins. Les monovariétaux sont les seuls vins qui vieillissent en fûts de 500 litres. Après un vieillissement, qui varie entre 15 et 20 mois, le mise en bouteille est effectuée. Tous les vins sont bouchés avec du liège naturel. Ne étant ni filtrés ni stabilisés par le froid, ils peuvent donner lieu à un précipité avec l'âge.
