Winemaking of Quinta Vale Dona Maria Vintage 2017 Port Wine: The grapes were foot-trodden in traditional granite lagares before fermentation, together with 15% of the total brandy that would be added to the Port Wine. This allows the grapes to macerate at lower temperatures and for a longer period. The fortification is done at a single moment, adding the remaining brandy when the must is ready to be fortified. This is followed by foot-treading to ensure good homogenization of the whole wine and to stop fermentation. The wine is then placed in oak and chestnut barrels, and transferred to stainless steel vats during the warmer months.
