The Quinta das Carvalhas is a property of great beauty and spectacularity, with a predominant position on the slope of the left bank of the Douro River in Pinhão, extending across the slopes of the right bank of the tributary Rio Torto. The oldest written references to the Quinta date back to 1759, with its magnificent Vinhas Velhas, planted post-phylloxera, reaching the respectable age of a century. Winemaking of Quinta das Carvalhas Vinha do Eirol red: After a surgical manual harvest, the grapes are transported to the winery in 20 kg boxes. After going through a meticulous manual selection, the bunches are directed to a small French oak vat where only 30% of the bunches are destemmed and crushed. This is followed by alcoholic fermentation at 24-26ºC, with a slight "pigeage" and pump-overs done by bucket in order to seek a good but careful extraction. After alcoholic fermentation, the wine completes malolactic fermentation and ages in used French oak barrels.
