Desengaçadas e transportadas por gravidade para as cubas de fermentação, esta decorre com temperaturas moderadas durante 20 dias com uma maceração prolongada que proporciona a este vinho uma extrema complexidade aromática. O seu estágio de 12 meses em madeira francesa nova, confere-lhe uma complexidade e uma elegância notável. A maturação em garrafa decorre durante mais de 8 meses.
