Vinifizierung: Alle Trauben werden manuell geerntet und stammen größtenteils vom Quinta do Meco und älteren Weinbergen im Douro Superior. Bei der Ankunft im Weinkeller durchlaufen sie einen Sortiertisch, an dem eine strenge Auswahl erfolgt. Anschließend werden sie entrappt, sanft zerdrückt und in trichterförmige Edelstahltanks zur Gärung überführt, wo die alkoholische Gärung bei kontrollierter Temperatur beginnt. Während des Gärprozesses wird die französische Technik des "délestage" angewendet, die bei trichterförmigen Tanks hauptsächlich dazu dient, die Kontaktfläche mit der Schale zu vergrößern, wenn der Most/Wein über die Maische (den sogenannten Hut) abgepumpt wird. Das Ergebnis ist ein konzentrierter und komplexer Wein, der Eleganz bewahrt und Rustikalität vermeidet. Reifung: Der Roquette & Cazes reifte etwa 18 Monate in französischen Eichenfässern. Ein Wein, der die Vinifikationstechniken von Bordeaux hervorhebt und perfekt mit der Identität des Douro harmoniert.
