Vinifizierung des Weins Quinta das Bageiras Pai Abel Tinto: Da die Trauben dieses Weins ein Parzelle mit zwei gemischten Rebsorten liefern, wird versucht, die Art der Bepflanzung eines hundertjährigen Weinbergs zu replizieren. Auch mit diesem Ziel wurde durch die Auslese im Weinberg die Produktion auf zwei oder drei Trauben pro Rebstock begrenzt. Da die Trauben der beiden Rebsorten gleichzeitig geerntet und ohne Entrappen vergoren werden, fermentieren sie etwa eine Woche lang in einem offenen Bottich. Während dieser Zeit wurden mehrmals täglich Überpumpungen mit Holzpressen durchgeführt, bis der Wein die richtige Intensität erreichte. Schließlich fermentierte der Wein in gebrauchten französischen Eichenfässern, in denen er auch reifte. Danach wurde er in ein kleines Holzfass umgefüllt, wo er bis zur Abfüllung ohne Klärung oder Filtration verblieb.
