Die sorgfältig ausgewählten Trauben wurden ganz gepresst, um einen Most von hoher Qualität zu erhalten. Der Most "Lágrima" wurde gekühlt und anschließend 48 Stunden lang bei niedrigen Temperaturen dekantiert. Die Gärung erfolgte in einem Edelstahltank bei etwa 16ºC über 20 Tage, gefolgt von einer Reifezeit auf feinen Hefen. Durch die klassische Methode fand eine zweite Gärung in der Flasche statt, die dem Schaumwein einzigartige Eigenschaften verlieh, erfrischende und lebendige Aromen, die zeigen, wie sich der Alvarinho in seiner ganzen Fülle präsentiert. Schließlich wurde in der letzten Produktionsphase nach Abschluss der Gärung das Degorgieren durchgeführt.
