Herstellung des Aguardente Adega Velha 12 Anos XO: Die Trauben, ausgewählt wegen ihres hohen Säuregehalts und niedrigen Zuckergehalts, sind die Grundlage für einen leichten und ausgewogenen Wein. Der Wein wird anschließend zwei langsamen und sorgfältigen Destillationen in einem Charentais-Alambik unterzogen, der aus der Region Cognac in Frankreich stammt. Nach dem Destillationsprozess wird der Aguardente in französischen Eichenfässern aus der Region Limousin gereift, wobei die endgültige Charge ein Durchschnittsalter von 12 Jahren Reifung aufweist.
