Schaumwein, der aus Traubenmost (ohne Pressung) von 100% Alvarinho hergestellt wird. Die Flaschengärung, die verlängerte Lagerung (24 Monate) immer bei kontrollierter Temperatur und die Harmonisierung der Rebsorte mit der traditionellen Champagnermethode (klassische Methode) machen den Côto de Mamoelas zu einem "gierigen" Schaumwein mit einzigartiger Eleganz, Frische, Cremigkeit und Persistenz. Ideal für alle Anlässe, bei denen man überraschen möchte! VINIFIKATION Die zuvor selektierten Trauben, die ausschließlich in 20 kg Kisten transportiert werden, werden ganz gepresst, um einen hochwertigen Most zu erhalten, der den Schaumwein Vinho Verde Alvarinho hervorbringt. Der Most wird 48 Stunden lang bei 12º C geklärt und 12-15 Tage lang bei kontrollierter Temperatur vergoren. Es folgt eine Lagerzeit auf feinen Hefen von 5 Monaten. Anschließend erfolgt die Abfüllung, die Gärung (klassische Methode) und eine Lagerung von 24 Monaten, nach der die "Remouage" und das "Degorgement" durchgeführt werden.
