Vinificazione del Blog di Tiago Cabaço Vino varietale rosso: Nel 2019, le vigne più antiche e le migliori parcelle hanno sperimentato una maturazione lunga e graduale, risultando in uve con un equilibrio eccezionale tra acidità e tannini. Le varietà Syrah e Alicante Bouschet sono state quelle che hanno beneficiato di più delle condizioni favorevoli della natura, consegnando uve in un punto di maturazione perfetto. Con una materia prima di così alta qualità, hanno deciso di intervenire il meno possibile, permettendo alle uve di parlare da sole. Si sono limitati a una leggera pigiatura a piedi nei tini, seguendo i metodi tradizionali della regione, seguita da un invecchiamento in botti nuove e di secondo utilizzo di rovere francese, affinché il vino potesse esprimersi in modo più puro.

Setoso e vellutato nella texture, è un rosso intenso e strutturato, vigoroso ma non aggressivo, complesso ed elegante, con un finale fresco e grande potenziale di invecchiamento.
Teso e chiuso, concentrato e potente, floreale e fruttato, termina con alcune note terrose che aggiungono complessità.
