Dall'Alto dos Amores possiamo vedere quello che è probabilmente il paesaggio più straordinario della regione del Dão. Forse è per questo che l'Alto dos Amores è stato, fin dall'antichità, il punto d'incontro delle coppie innamorate della città di Santar. Se in altri tempi la magia di questi paesaggi serviva a conquistare i cuori, oggi le uve che vi crescono servono a conquistare gli amanti del vino più esigenti. È il risultato del romanticismo di questa storia, che dà origine a questo spumante di Casa de Santar.Vinificazione: Pigiatura con diraspatura totale, pressatura pneumatica soffice, dove è stato utilizzato solo il mosto fiore. La chiarifica è stata naturale statica e la fermentazione alcolica è avvenuta a 18°C. Spumante metodo classico. Affinamento: Minimo 24 mesi in cantina e 3 mesi in bottiglia.
