Vinificazione del Vino Quinta das Bageiras Avo Fausto bianco 2021: fatto con uve Maria Gomes, questo vino proviene da una vigna la cui produzione è stata notevolmente ridotta e vendemmiata relativamente presto, al fine di aumentare l'acidità naturale originata da un ombrello bianco. È stato vinificato a flusso aperto, essendo la maggior parte posta in piccoli decantatori da 1 m³, dove è rimasto tra 24 e 36 ore per effettuare la decantazione tramite utilizzo naturale. Alla fine di questo processo, fermentato in botti usate di rovere francese. È stata fatta una connessione e stagnata nelle botti fino a diventare completamente limpida, in modo naturale. Imbottigliato senza filtrazione o chiarifica.
