Vinificazione del Vino Quinta da Pedra Escrita Biologico Bianco: Vendemmia manuale in piccole cassette forate da 15 Kg, fermentazione con tecnologia a freddo, in ambiente riduttivo, con temperatura controllata intorno ai 16ºC. L'uva viene pressata senza schiacciamento e senza diraspatura sotto atmosfera inerte per preservare tutto il potenziale aromatico dell'uva. Viene fatto un grande sforzo affinché tutte le operazioni pre-fermentative siano eseguite con la massima precisione, essendo responsabili della qualità intrinseca del futuro vino. L'intero vino fermenta in legno di rovere francese usato e vi rimane dopo un piccolo travaso sulle fecce fini con agitazione periodica "battonage" fino alla preparazione del lotto finale alla fine della primavera. Fermentazione e affinamento di 6 mesi in legno di rovere francese con agitazione delle fecce fino all'imbottigliamento, dopo di che ha affinato in bottiglia per 4 mesi.

Aroma molto agrumato e minerale, note di pompelmo, frutti esotici discreti e fiori di campo complessi da una forte mineralità del suolo esclusivamente granitico, con un affumicato molto discreto
