Oltre alla sua notorietà nella produzione di vini dell'Alentejo, la Cantina Cooperativa di Borba ha una grande tradizione nella produzione di acquaviti, utilizzando e selezionando vitigni tradizionali della regione di Borba. Il vinacciolo è il prodotto risultante dalla pressatura delle masse vinicole provenienti dalla produzione di vini, le quali sono distillate in alambicchi propri, rispettando rigorosamente temperature e tempi di distillazione, garantendo così la separazione dei diversi alcoli, la genuinità e la qualità delle acquaviti. Successivamente invecchia circa 24 mesi in botti di legno, rovere francese, per l'affinamento finale prima dell'imbottigliamento.
