Vinificazione del Vino Marques de Borba Vinhas Velhas Bianco: le uve sono raccolte manualmente di prima mattina, in piccole cassette, per preservarne la freschezza. Le uve vengono raffreddate in una cella frigorifera prima di essere vinificate. La fermentazione avviene in vasche di acciaio inox con controllo della temperatura. Dopo 1/3 della fermentazione alcolica, il mosto viene trasferito in barrique nuove e usate dove la fermentazione si conclude.
