Con uve delle varietà più tipiche dell'Alentejo, prodotte nella sotto-regione di Borba, è stato elaborato il vino Rótulo Cortiça, un vero e proprio emblema della Cantina di Borba. Provenienti da vigneti vecchi, le uve sono state sottoposte a un rigoroso controllo nell'evoluzione della maturazione, essendo state raccolte in piccole quantità. In cantina, dopo la diraspatura e la pigiatura delicata dell'uva, è iniziata la fermentazione alcolica che si è protratta per circa 10-15 giorni con la temperatura controllata a 24ºC, per una maggiore estrazione degli aromi e dei sapori fruttati dell'uva. Per aumentare la complessità polifenolica, i tannini e la struttura del vino, questo è rimasto in vasca in un processo di macerazione post-fermentativa. La fermentazione malolattica è avvenuta successivamente in recipienti di acciaio inox. Per esaltare e elevare le sue caratteristiche organolettiche, il vino ha affinato per 12 mesi in barrique di 3º e 4º anno, di rovere francese e in botti di legno esotico, al termine dei quali è seguito un affinamento di 6 mesi in bottiglia in cantina.
