Vinificazione del Vino Tinto Carm Grande Reserva 2018: eliminazione dei grappoli non perfetti, diraspatura totale, pigiatura soffice e shock termico, a cui segue un periodo di macerazione prefermentativa a freddo in frantoio per circa 12-24 ore, al termine della quale gli impasti venivano trasferiti in ampi tini a bassa fermentazione, dove fermentavano per circa 10 giorni, a temperature comprese tra 24 e 26ºC. La fermentazione malolattica si è svolta naturalmente e si è conclusa a fine dicembre, parte del vino ha fermentato in legno.Invecchiamento: 12 mesi in botti nuove di rovere francese, a grana extra fine
Molto concentrato, caldo, con tannini decisi e struttura morbida, finale molto intenso e persistente, che mostra con forza la forza dei vini Douro Superior
Molto fresco e intenso dove predominano note di frutti neri selvatici e amarene in equilibrio con seducenti “sfumature di liquirizia”, l'aroma è complessato da note di legno
