Red Cão is synonymous with Douro! One of the most appreciated grape varieties by current winemakers in the region for its adaptability, resistance, and low productivity. A variety of high vigor, with small berries and very thick skins, which still proposes a less conventional approach to its vinification in order to discover the fresher and more elegant side of this variety. Vinification of the Red Cão Tinto: The grapes are hand-picked and transported to the winery in 20kg boxes. After going through a careful manual selection, 30% of the bunches are destemmed, and the grapes are lightly crushed before being directed to the fermentation tank, while the remaining 70% are directed to the same tank with the whole bunch. Alcoholic fermentation of the must follows in stainless steel tanks at 24-26ºC. The wine ages in used French oak barrels for a period of 12 months until bottling.
