Vinificazione: Provenienti da piccoli appezzamenti, le uve precedentemente selezionate vengono vendemmiate a mano in casse a settembre, molto presto, in modo da arrivare in cantina ancora durante la mattina. Dopo 3 giorni di macerazione pre-fermentativa, la fermentazione alcolica avviene in tini di inox a 26ºC. Le masse vengono pressate in pressa idraulica e la fermentazione malo-lattica avviene in barriques (nuove e di 2° anno) di rovere francese, dove affina per 14 mesi.
