Vinificazione del vino rosso Quinta das Bageiras Pai Abel: come le uve di questo vino forniscono un appezzamento con due varietà miste, cercando di replicare il tipo di piantagione di un vigneto secolare. Anche con questo obiettivo, e attraverso l'esposizione in vigna, la produzione è stata limitata a due o tre grappoli per ceppo. Poiché le uve di entrambe le varietà, raccolte contemporaneamente e senza diraspatura, fermentano per circa una settimana in una pressa aperta. Durante questo tempo sono stati effettuati rimontaggi con masse di legno, più volte al giorno, finché il vino non ha raggiunto la giusta intensità. Infine, il vino ha finito per fermentare in botti usate di rovere francese dove ha invecchiato. Successivamente viene trasferito in una piccola botte di legno dove rimane fino all'imbottigliamento senza alcuna chiarifica o filtraggio.
