Vinificazione del Vinho Esporao Private Collection Tinto 2019: ogni vitigno è stato vinificato e affinato separatamente. Il Syrah e l'Aragonez con fermentazione in piccoli tini di acciaio inox, e pigiatura a piedi alternata con brevi rimontaggi manuali effettuati 2-3 volte al giorno, a seconda della degustazione quotidiana durante la fermentazione. L'Alicante Bouschet fermenta in un piccolo serbatoio di acciaio inox, con rimontaggi manuali. In questo modo, e a causa della buccia relativamente fragile dell'uva, si evita un'estrazione eccessiva di tannini derivante dalla pigiatura a piedi. Dopo la pressatura, i vini sono stati mantenuti separati. La fermentazione malolattica è avvenuta nelle botti in modo spontaneo. L'affinamento è stato effettuato per il 30% in botti nuove e per il 70% in botti usate (1 anno) da 225L e 500L di rovere francese. Dopo 18 mesi di affinamento, durante i quali è stato effettuato un solo travaso immediatamente dopo la malolattica, è stato costituito il lotto finale e imbottigliato il 25 giugno 2015, con una leggera filtrazione e senza alcun tipo di chiarifica.
