Questo Spumante rimane in cantina per 60 lunghi mesi a temperatura costante di 12ºC. Lo Chardonnay mostra raffinatezza e freschezza, l'Arinto con un'acidità raffinata evidenzia il potenziale del terreno sabbioso-argilloso della Vigna delle Rondini situata nella Pedreira di Vilarinho. Per ottenere la struttura e il potenziale di conservazione indispensabili a questo eccezionale Spumante ELPÍDIO Superior, vengono utilizzati solo i succhi della pressatura del nocciolo dell'uva intera, dopo la separazione della prima e dell'ultima estrazione. Le uve vengono lasciate fermentare per la prima volta, trasformando il succo in vino base. La permanenza in vasca permette lo sviluppo della complessità degli aromi e della struttura dello Spumante Elpídio Superior. Il dégorgement glacée dello Spumante São Domingos Elpídio Superior Brut libera i lieviti e successivamente viene aggiunto 4 g/L di liquore di spedizione per completare il vino. Dopo un periodo di due mesi da tutto questo processo, la bottiglia di spumante è pronta per entrare sul mercato.
