Questo Spumante rimane in cantina per 60 lunghi mesi a temperatura costante di 12ºC. Il Sauvignon Blanc mostra sottili note di mela verde della Vinha do Bárrio a Mogofores. La Baga proveniente dalla Quinta do Amaro a Outeiro de Baixo evidenzia il potenziale del terroir della Bairrada per questa varietà di acidità delicata e magnifiche note di terra che la caratterizzano. Il dégorgement glacé dello Spumante São Domingos Elpidio Cuvée Brut libera i lieviti e successivamente sono stati aggiunti 3,70 g/L di liquore di spedizione per completare il vino. Dopo un periodo di due mesi da tutto questo processo, la bottiglia di spumante è pronta per entrare sul mercato.
