Le uve sono state raccolte a mano al punto di maturazione perfetto in cassette da 20 kg, quindi trasportate alla Cantina Riserva Quinta do Sol. All'arrivo in cantina, i grappoli vengono sottoposti a una prima selezione manuale, seguita da una diraspatura delicata, dopo la quale le bacche vengono classificate prima di essere alimentate per gravità nei piccoli serbatoi di fermentazione. La pigiatura avviene solo durante l'ingresso per gravità nel serbatoio, evitando così l'ossidazione indesiderata. Le fermentazioni sono monitorate e regolate per ottenere il meglio da ogni varietà d'uva. Segue una macerazione post-fermentativa per estrarre i tannini dai semi, che completano quelli ottenuti dalle bucce, promuovendo così lo sviluppo di una sensazione in bocca più ampia e aumentando il potenziale di invecchiamento del vino.
